Description

An incredibly moist Apple Crumb Cake with Cinnamon Apple Drizzle, featuring a tender cake, tart apples, and a thick, buttery crumble.

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 medium apples, peeled and chopped

For the Crumb Topping:

  • 1 cup all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, cold and cubed
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar

For the Cinnamon Apple Drizzle:

  • 1 tbsp unsalted butter
  • ½ cup brown sugar, packed
  • 1 tsp ground cinnamon
  • 2 tbsp milk
  • A pinch of salt

Instructions

  • Prep: Preheat oven to 350°F (175°C). Grease and flour a 9-inch square pan.
  • Make Crumble: In a bowl, combine crumble ingredients. Cut in the cold butter with your fingertips until coarse crumbs form. Refrigerate.
  • Mix Cake Batter: In a separate bowl, whisk together 1 ½ cups flour, baking powder, baking soda, ½ tsp cinnamon, and ¼ tsp salt.
  • Cream Butter & Sugar: In a large bowl, beat softened butter and 1 cup sugar until fluffy. Beat in eggs one at a time, then vanilla.
  • Combine Batter: Alternate adding the dry ingredients and sour cream to the butter mixture, beginning and ending with dry. Mix until just combined. Fold in chopped apples.
  • Assemble & Bake: Spread batter in the prepared pan. Sprinkle the chilled crumble topping evenly over the top. Bake for 45-50 minutes, until a toothpick comes out with moist crumbs.
  • Make Drizzle: While the cake cools, melt 1 tbsp butter in a small saucepan. Stir in ½ cup brown sugar and 1 tsp cinnamon. Whisk in milk and a pinch of salt. Simmer for 1-2 minutes until slightly thickened.
  • Serve: Drizzle the warm sauce over your Apple Crumb Cake with Cinnamon Apple Drizzle and serve.
