- 1 ½ cups all-purpose flour

- ¾ cup unsalted butter, softened

- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 2 medium apples, peeled and chopped

- 1 cup all-purpose flour
- 1 tsp ground cinnamon
- ¼ tsp salt
- ½ cup unsalted butter, cold and cubed
- ½ cup brown sugar, packed
- ¼ cup granulated sugar
→ For the Cinnamon Apple Drizzle:
- 1 tbsp unsalted butter
- ½ cup brown sugar, packed
- 1 tsp ground cinnamon
- 2 tbsp milk
- A pinch of salt
Instructions
- Prep: Preheat oven to 350°F (175°C). Grease and flour a 9-inch square pan.
- Make Crumble: In a bowl, combine crumble ingredients. Cut in the cold butter with your fingertips until coarse crumbs form. Refrigerate.
- Mix Cake Batter: In a separate bowl, whisk together 1 ½ cups flour, baking powder, baking soda, ½ tsp cinnamon, and ¼ tsp salt.
- Cream Butter & Sugar: In a large bowl, beat softened butter and 1 cup sugar until fluffy. Beat in eggs one at a time, then vanilla.
- Combine Batter: Alternate adding the dry ingredients and sour cream to the butter mixture, beginning and ending with dry. Mix until just combined. Fold in chopped apples.
- Assemble & Bake: Spread batter in the prepared pan. Sprinkle the chilled crumble topping evenly over the top. Bake for 45-50 minutes, until a toothpick comes out with moist crumbs.
- Make Drizzle: While the cake cools, melt 1 tbsp butter in a small saucepan. Stir in ½ cup brown sugar and 1 tsp cinnamon. Whisk in milk and a pinch of salt. Simmer for 1-2 minutes until slightly thickened.
