Berry Cottage Cheese Clafoutis

Description

A light, tender, and delicious dessert with a creamy, protein-packed base and sweet, juicy berries.


Ingredients

  • → 2 cups full fat cottage cheese
  • → 4 large eggs
  • → 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, maple syrup)
  • → 1 tsp vanilla extract
  • → 2 tbsp cornstarch or coconut flour
  • → 1 1/2 cups berries (Fresh or frozen berries – blueberries, raspberries, cherries)
  • → 1 tsp lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, use a hand blender to blend the cottage cheese until smooth.
  3. Add the eggs, sweetener, vanilla, and cornstarch. Whisk until well combined.
  4. Pour the batter into the prepared baking dish. Arrange the berries over the top.
  5. Bake for 35-40 minutes, or until the clafoutis is set. Let cool for a few minutes before serving.

Notes

  • For a lump-free filling, make sure to blend the cottage cheese until it’s very smooth.
  • You can use any kind of berries you like, such as peaches, plums, or apples.
  • This dish is best served warm, with a dusting of powdered sugar or a dollop of whipped cream.
  • Do not over-bake the clafoutis, as it will become tough and rubbery.
