A light, tender, and delicious dessert with a creamy, protein-packed base and sweet, juicy berries.
Ingredients
- → 2 cups full fat cottage cheese
- → 4 large eggs
- → 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, maple syrup)
- → 1 tsp vanilla extract
- → 2 tbsp cornstarch or coconut flour
- → 1 1/2 cups berries (Fresh or frozen berries – blueberries, raspberries, cherries)
- → 1 tsp lemon zest (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, use a hand blender to blend the cottage cheese until smooth.
- Add the eggs, sweetener, vanilla, and cornstarch. Whisk until well combined.
- Pour the batter into the prepared baking dish. Arrange the berries over the top.
- Bake for 35-40 minutes, or until the clafoutis is set. Let cool for a few minutes before serving.
Notes
- For a lump-free filling, make sure to blend the cottage cheese until it’s very smooth.
- You can use any kind of berries you like, such as peaches, plums, or apples.
- This dish is best served warm, with a dusting of powdered sugar or a dollop of whipped cream.
- Do not over-bake the clafoutis, as it will become tough and rubbery.
