Description

A flavor-packed and incredibly comforting lasagna that combines creamy ranch, spicy buffalo chicken, and three types of cheese.


Ingredients

  • Lasagna:
    • 12 ounces lasagna noodles
    • 3 ½ cups rotisserie chicken, shredded
  • Cheese Mixture:
    • 1 packet ranch seasoning
    • 24 ounces cream cheese, softened
    • 1 cup buffalo sauce
    • ½ cup milk
    • 2 cups cheddar cheese, shredded
    • 2 cups mozzarella cheese, shredded
  • Optional Toppings:
    • Ranch dressing
    • Green onions, chopped
    • Blue cheese crumbles

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles to al dente, according to package directions.
  2. In a large bowl, whisk together the softened cream cheese and ranch seasoning until smooth. Stir in buffalo sauce and milk. Fold in the shredded chicken, 1 cup of mozzarella, and 1 cup of cheddar.
  3. Spread a thin layer of the chicken mixture on the bottom of a 9×13-inch baking dish.
  4. Layer noodles on top, followed by a layer of the chicken mixture. Repeat, ending with a layer of noodles.
  5. Top the lasagna with the remaining 1 cup of mozzarella and 1 cup of cheddar cheese.
  6. Bake for 30-40 minutes until the cheese is melted and bubbly. Let cool for 10 minutes before slicing. Garnish as desired.

Notes

  • For a smooth filling, ensure your cream cheese is completely at room temperature.
  • Grating your own cheese will give you a better melt.
  • Let the lasagna rest for at least 10 minutes before slicing to prevent the layers from falling apart.
  • For a spicier dish, add a little extra buffalo sauce to the filling.
