→ For the Brownie Base:
- ½ cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ⅓ cup (40g) unsweetened cocoa powder
- ½ cup (65g) all-purpose flour
- ¼ tsp salt
- ¼ tsp baking powder
→ For the Chocolate Mousse:
- 1 ½ cups (350ml) heavy whipping cream, chilled
- 8 oz (225g) semi-sweet chocolate, finely chopped
- 3 tbsp (45ml) milk
- 2 tbsp (25g) powdered sugar
→ For the Ganache Topping:
- 4 oz (115g) semi-sweet chocolate, finely chopped
- ½ cup (120ml) heavy cream
Instructions
- Bake Brownie: Preheat oven to 350°F (175°C). Line an 8×8 pan with a parchment sling. Whisk flour, cocoa, salt, and baking powder. In a separate bowl, whisk melted butter and sugar, then eggs and vanilla. Fold dry into wet. Pour into pan and bake 25-30 minutes. Cool completely.
- Make Mousse: Melt 8 oz chocolate with 3 tbsp milk until smooth. Let cool to lukewarm. In a chilled bowl, whip 1 ½ cups cold heavy cream with powdered sugar to stiff peaks. Fold a scoop of cream into the cooled chocolate, then fold the chocolate mixture back into the cream.
- Layer & Chill: Spread the mousse evenly over the cooled brownie. Refrigerate for at least 4 hours, until firm.
- Make Ganache: Place 4 oz chopped chocolate in a bowl. Heat ½ cup cream until just simmering, then pour over chocolate. Let sit 5 minutes, then whisk until smooth.
- Finish: Let ganache cool for 10-15 minutes. Pour over the chilled mousse layer. Refrigerate for 30 more minutes to set the ganache.
- Slice & Serve: Lift the Chocolate Mousse Brownies from the pan using the sling. Use a hot knife for clean slices. Serve chilled.
