- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- → For the Creamy Garlic Sauce:
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Dijon mustard (optional)
- Salt and pepper, to taste
- → For the Mashed Potatoes:
- 2 lbs potatoes, peeled and cubed
- ½ cup warm milk
- ¼ cup butter
- Salt, to taste
- → For garnish:
- Fresh thyme leaves
Instructions
- Make Mashed Potatoes: Place cubed potatoes in a pot and cover with salted water. Bring to a boil, then simmer for 15-20 minutes until tender. Drain and return to pot. Mash with warm milk and butter. Season with salt.
- Cook Shrimp: Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. In a large skillet, cook shrimp over medium-high heat for 1-2 minutes per side until pink. Remove from skillet.
- Make Sauce: In the same skillet, melt butter over low heat. Add minced garlic and cook for 1 minute. Whisk in heavy cream and Parmesan cheese until the sauce thickens. Stir in Dijon mustard, salt, and pepper.
- Assemble: Add the cooked shrimp back to the skillet and toss to coat. Serve the creamy garlic shrimp over a generous bed of mashed potatoes. Garnish with fresh thyme.
Notes
- Do not overcook the shrimp, as they will become tough and rubbery.
- For a smooth sauce, grate your own Parmesan cheese and keep the heat low.
- Russet or Yukon Gold potatoes are best for a fluffy mash.
