Creamy Garlic Shrimp Over Mashed Potatoes

Description

A rich, buttery, and incredibly flavorful dish with perfectly cooked shrimp and a velvety garlic sauce over a bed of creamy mashed potatoes.


Ingredients

  • For the Shrimp:
    • 1 lb large shrimp, peeled and deveined
    • 2 tablespoons olive oil
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder
    • Salt and pepper, to taste
  • For the Creamy Garlic Sauce:
    • 2 tablespoons butter
    • 4 cloves garlic, minced
    • 1 cup heavy cream
    • ½ cup grated Parmesan cheese
    • 1 teaspoon Dijon mustard (optional)
    • Salt and pepper, to taste
  • For the Mashed Potatoes:
    • 2 lbs potatoes, peeled and cubed
    • ½ cup warm milk
    • ¼ cup butter
    • Salt, to taste
  • For garnish:
    • Fresh thyme leaves

Instructions

  • Make Mashed Potatoes: Place cubed potatoes in a pot and cover with salted water. Bring to a boil, then simmer for 15-20 minutes until tender. Drain and return to pot. Mash with warm milk and butter. Season with salt.
  • Cook Shrimp: Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. In a large skillet, cook shrimp over medium-high heat for 1-2 minutes per side until pink. Remove from skillet.
  • Make Sauce: In the same skillet, melt butter over low heat. Add minced garlic and cook for 1 minute. Whisk in heavy cream and Parmesan cheese until the sauce thickens. Stir in Dijon mustard, salt, and pepper.
  • Assemble: Add the cooked shrimp back to the skillet and toss to coat. Serve the creamy garlic shrimp over a generous bed of mashed potatoes. Garnish with fresh thyme.

Notes

  • Do not overcook the shrimp, as they will become tough and rubbery.
  • For a smooth sauce, grate your own Parmesan cheese and keep the heat low.
  • Russet or Yukon Gold potatoes are best for a fluffy mash.
  • This dish is best served immediately.
