Easy Swiss Mushroom Melt

Description

A cheesy, savory grilled sandwich with earthy mushrooms, a hint of thyme, and a glorious, gooey Swiss cheese center.


Ingredients

  • → 2 tbsp butter (plus extra for bread)
  • → 1 tbsp olive oil
  • → 1 shallot, finely chopped
  • → 2 cups mushrooms (Portobello, Cremini, or Shiitake), sliced
  • → 1 tsp thyme (fresh or dried)
  • → 1 tbsp balsamic vinegar (optional for added flavor)
  • → Salt and pepper to taste
  • → 4 slices Swiss cheese (or Gruyère for a richer taste)
  • → 8 slices bread (Rye, Sourdough, or Artisan)

Instructions

  1. In a skillet over medium heat, melt 2 tbsp butter and olive oil. Add shallot and cook for 1 minute until softened.
  2. Add mushrooms and cook for 5-7 minutes until they release their liquid and begin to brown. Stir in thyme, balsamic vinegar (if using), and season with salt and pepper. Set aside.
  3. Butter one side of each of the 8 bread slices. Place 4 slices, butter-side down, in a clean skillet or griddle.
  4. Top with two slices of Swiss cheese, then the mushroom mixture, and finally the remaining two slices of cheese.
  5. Place the remaining 4 bread slices on top, butter-side up. Cook for 3-4 minutes per side until golden brown and the cheese is melted. Slice and serve immediately.

Notes

  • Don’t crowd the pan when cooking the mushrooms to ensure they get a good sear.
  • Use a hearty bread that can stand up to the savory filling.
  • Cook over medium heat to avoid burning the bread before the cheese melts.
  • For the best result, use fresh mushrooms and wipe them clean instead of soaking them.
