Description
A cheesy, savory grilled sandwich with earthy mushrooms, a hint of thyme, and a glorious, gooey Swiss cheese center.
Ingredients
- → 2 tbsp butter (plus extra for bread)
- → 1 tbsp olive oil
- → 1 shallot, finely chopped
- → 2 cups mushrooms (Portobello, Cremini, or Shiitake), sliced
- → 1 tsp thyme (fresh or dried)
- → 1 tbsp balsamic vinegar (optional for added flavor)
- → Salt and pepper to taste
- → 4 slices Swiss cheese (or Gruyère for a richer taste)
- → 8 slices bread (Rye, Sourdough, or Artisan)
Instructions
- In a skillet over medium heat, melt 2 tbsp butter and olive oil. Add shallot and cook for 1 minute until softened.
- Add mushrooms and cook for 5-7 minutes until they release their liquid and begin to brown. Stir in thyme, balsamic vinegar (if using), and season with salt and pepper. Set aside.
- Butter one side of each of the 8 bread slices. Place 4 slices, butter-side down, in a clean skillet or griddle.
- Top with two slices of Swiss cheese, then the mushroom mixture, and finally the remaining two slices of cheese.
- Place the remaining 4 bread slices on top, butter-side up. Cook for 3-4 minutes per side until golden brown and the cheese is melted. Slice and serve immediately.
Notes
- Don’t crowd the pan when cooking the mushrooms to ensure they get a good sear.
- Use a hearty bread that can stand up to the savory filling.
- Cook over medium heat to avoid burning the bread before the cheese melts.
- For the best result, use fresh mushrooms and wipe them clean instead of soaking them.
