Ingredients
- → 1 cup oat flour
- → 1 scoop (30g) vanilla protein powder
- → ½ cup Greek yogurt
- → 2 large eggs
- → ¼ cup almond milk
- → 1 tsp baking powder
- → 1 tsp vanilla extract
- → 1 tbsp honey (optional)
Instructions
- Preheat your waffle iron.
- In a large bowl, whisk together the oat flour, protein powder, and baking powder.
- In a separate bowl, whisk together the Greek yogurt, eggs, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined.
- Lightly grease the waffle iron. Pour half of the batter onto the waffle iron.
- Cook for 5-7 minutes, or until golden brown.
- Repeat with the remaining batter. Serve immediately with your favorite toppings.
Notes
- Don’t overmix the batter. A few small lumps are okay.
- For a gluten-free option, use certified gluten-free oat flour.
- You can easily double the recipe to make a larger batch.
- Leftover waffles can be stored in the freezer for up to 3 months.
