High Protein Waffles with 45g Protein for Epic Mornings

Description

Fluffy, golden waffles packed with protein, perfect for a delicious and energizing breakfast or brunch.

 


Ingredients

  • → 1 cup oat flour
  • → 1 scoop (30g) vanilla protein powder
  • → ½ cup Greek yogurt
  • → 2 large eggs
  • → ¼ cup almond milk
  • → 1 tsp baking powder
  • → 1 tsp vanilla extract
  • → 1 tbsp honey (optional)

Instructions

  • Preheat your waffle iron.
  • In a large bowl, whisk together the oat flour, protein powder, and baking powder.
  • In a separate bowl, whisk together the Greek yogurt, eggs, almond milk, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and whisk until just combined.
  • Lightly grease the waffle iron. Pour half of the batter onto the waffle iron.
  • Cook for 5-7 minutes, or until golden brown.
  • Repeat with the remaining batter. Serve immediately with your favorite toppings.

Notes

  • Don’t overmix the batter. A few small lumps are okay.
  • For a gluten-free option, use certified gluten-free oat flour.
  • You can easily double the recipe to make a larger batch.
  • Leftover waffles can be stored in the freezer for up to 3 months.
