Description
All the classic flavors of a Philly cheesesteak—savory steak, sweet veggies, and gooey cheese—in a delicious, low-carb roll-up.
Ingredients
- → 1 lb thinly sliced ribeye or sirloin beef
- → 8 oz provolone cheese, sliced
- → 1 cup mixed bell peppers, chopped
- → 1 medium sweet onion, chopped
- → 2 tbsp extra virgin olive oil
- → 4 low-carb tortillas
Instructions
- Heat a large skillet over medium-high heat. Add the extra virgin olive oil.
- Sauté the chopped bell peppers and onion for 5-7 minutes, until softened. Remove from the pan and set aside.
- Add the thinly sliced beef to the hot pan. Cook for 2-3 minutes until browned and cooked through.
- Remove the pan from the heat. Divide the beef and sautéed vegetables evenly among the 4 low-carb tortillas.
- Top each with two slices of provolone cheese.
- Roll each tortilla up tightly, tucking in the ends to create a roll-up. Serve immediately.
Notes
- For the best texture, make sure the beef is sliced as thinly as possible.
- A hot skillet is key to getting a nice sear on the meat.
- Don’t overcook the steak, or it will become tough.
- These roll-ups are best enjoyed warm, right after you make them.
