- 1 ½ lb boneless skinless chicken breast, cut into 1-inch cubes
- → For the marinade:
- ½ cup ranch dressing (store-bought or homemade)
- ¼ cup grated parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried parsley (or fresh parsley, chopped)
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 teaspoon lemon juice (optional for extra tang)
Instructions
- In a large bowl, whisk together all the marinade ingredients.
- Add the cubed chicken to the marinade and toss to coat. Marinate for at least 30 minutes in the refrigerator. If using wooden skewers, soak them in water for at least 30 minutes.
- Thread the marinated chicken onto the skewers, leaving a small space between each piece.
- Preheat your grill to medium-high heat. Place the skewers on the grates.
- Grill for 4-5 minutes per side, turning occasionally, until the chicken is cooked through and has a beautiful golden-brown sear. Serve immediately.
Notes
- Marinating for at least 30 minutes will make the chicken more tender and flavorful.
- Don’t overcrowd the grill to ensure the chicken gets a good sear.
- You can easily cook these in a large skillet or in the oven if you don’t have a grill.
