- 1 ½ cups Samoa cookies, crushed
- 6 tbsp unsalted butter, melted
- → For the filling:
- 32 oz cream cheese, softened
- 1 cup sugar
- 4 large eggs
- 1 ½ tsp vanilla extract
- → For the topping:
- 1 cup sweetened shredded coconut, toasted
- ½ cup store-bought caramel sauce
- ½ cup chocolate ganache
Instructions
- Preheat oven to 325°F (160°C).
- Make Crust: Mix crushed Samoa cookies with melted butter and press into the bottom and up the sides of a 9-inch springform pan.
- Make Filling: Beat softened cream cheese until smooth. Add sugar and vanilla; mix until combined. Add eggs one at a time, mixing on low speed until just incorporated.
- Bake: Pour filling into the crust. Place pan in a large baking dish with about 1 inch of hot water. Bake for 1 hour 20 minutes, until the center has a slight jiggle.
- Cool: Turn off oven, prop the door open, and cool for 1 hour. Remove to a wire rack to cool completely, then refrigerate for at least 4 hours.
- Decorate: Top the chilled cheesecake with toasted coconut and a generous drizzle of caramel sauce and chocolate ganache.
Notes
- Toast the coconut in the oven at 350°F for 5-7 minutes, stirring often.
- Do not overmix the filling, as this can cause cracks.
- For clean slices, use a hot knife that you wipe clean between each cut.
- The cheesecake is best chilled overnight for the flavors to fully develop.
