Description

A decadent and creamy cheesecake with a Samoa cookie crust, topped with rich caramel, toasted coconut, and a silky chocolate ganache.


Ingredients

  • For the crust:
    • 1 ½ cups Samoa cookies, crushed
    • 6 tbsp unsalted butter, melted
  • For the filling:
    • 32 oz cream cheese, softened
    • 1 cup sugar
    • 4 large eggs
    • 1 ½ tsp vanilla extract
  • For the topping:
    • 1 cup sweetened shredded coconut, toasted
    • ½ cup store-bought caramel sauce
    • ½ cup chocolate ganache

Instructions

  • Preheat oven to 325°F (160°C).
  • Make Crust: Mix crushed Samoa cookies with melted butter and press into the bottom and up the sides of a 9-inch springform pan.
  • Make Filling: Beat softened cream cheese until smooth. Add sugar and vanilla; mix until combined. Add eggs one at a time, mixing on low speed until just incorporated.
  • Bake: Pour filling into the crust. Place pan in a large baking dish with about 1 inch of hot water. Bake for 1 hour 20 minutes, until the center has a slight jiggle.
  • Cool: Turn off oven, prop the door open, and cool for 1 hour. Remove to a wire rack to cool completely, then refrigerate for at least 4 hours.
  • Decorate: Top the chilled cheesecake with toasted coconut and a generous drizzle of caramel sauce and chocolate ganache.

Notes

  • Toast the coconut in the oven at 350°F for 5-7 minutes, stirring often.
  • Do not overmix the filling, as this can cause cracks.
  • For clean slices, use a hot knife that you wipe clean between each cut.
  • The cheesecake is best chilled overnight for the flavors to fully develop.
