Description

Ingredients

  • → 1 lb sausage (Italian or chicken sausage works well)
  • → 2 large sweet potatoes, peeled and cubed
  • → 1/4 cup honey
  • → 3 cloves garlic, minced
  • → 2 tablespoons soy sauce (or tamari for gluten-free)
  • → 1 tablespoon olive oil
  • → 1 teaspoon paprika
  • → Salt and pepper, to taste
  • → Fresh parsley, chopped (for garnish)

Instructions

  • In a large bowl, toss the cubed sweet potatoes with olive oil, paprika, salt, and pepper.
  • Heat a large skillet over medium-high heat. Add the sweet potatoes in a single layer. Cook for 10-12 minutes, turning occasionally, until golden and tender.
  • Slice the sausage and add it to the skillet with the sweet potatoes. Cook for another 5-7 minutes, until the sausage is browned and cooked through.
  • In a small bowl, whisk together the honey, minced garlic, and soy sauce.
  • Pour the sauce over the sausage and sweet potatoes in the skillet. Stir to coat everything and cook for 1 minute more until the sauce thickens slightly.
  • Garnish with fresh parsley and serve immediately.
