Strawberry Crunch Cheesecake Tacos

Description

A fun, handheld dessert that combines the classic flavors of strawberry cheesecake with a satisfying crunch.


Ingredients

  • For the filling:
    • 8 ounces (226g) cream cheese, softened
    • 1/2 cup (100g) granulated sugar
    • 1 teaspoon vanilla extract
    • 1/4 cup (60ml) heavy cream
    • 1 cup (150g) fresh strawberries, finely chopped
  • For the taco shells:
    • 1 1/2 cups (180g) graham cracker crumbs
    • 1/4 cup (50g) unsalted butter, melted
    • 1/4 cup (35g) chopped toasted pecans (optional)
  • For garnish (optional):
    • Additional chopped strawberries

Instructions

  • Preheat your oven to 350°F (175°C). Flip a muffin tin upside down.
  • In a medium bowl, combine graham cracker crumbs, melted butter, and pecans (if using). Stir until well combined.
  • Press a heaping tablespoon of the mixture onto two adjacent muffin tin cups to form a taco shell shape. Repeat until you have 8 shells.
  • Bake for 8-10 minutes until golden. Let cool completely on the tin before carefully removing.
  • In a large bowl, beat the softened cream cheese until smooth. Add sugar and vanilla and beat until combined.
  • Slowly pour in the heavy cream and beat on medium-high speed for 2-3 minutes, until the mixture is light and fluffy.
  • Gently fold in the finely chopped strawberries.
  • Spoon the filling into the cooled graham cracker shells. Garnish with more strawberries if desired. Serve immediately.

Notes

  • Make sure your cream cheese is at room temperature for a lump-free filling.
  • The taco shells must be completely cool before filling, or they will crumble.
  • You can make the shells a day ahead to save time.
  • For an extra touch, drizzle with a little chocolate or strawberry sauce.
