Ingredients
Scale
- → For the filling:
- 8 ounces (226g) cream cheese, softened
- 1/2 cup (100g) granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup (60ml) heavy cream
- 1 cup (150g) fresh strawberries, finely chopped
- → For the taco shells:
- 1 1/2 cups (180g) graham cracker crumbs
- 1/4 cup (50g) unsalted butter, melted
- 1/4 cup (35g) chopped toasted pecans (optional)
- → For garnish (optional):
- Additional chopped strawberries
Instructions
- Preheat your oven to 350°F (175°C). Flip a muffin tin upside down.
- In a medium bowl, combine graham cracker crumbs, melted butter, and pecans (if using). Stir until well combined.
- Press a heaping tablespoon of the mixture onto two adjacent muffin tin cups to form a taco shell shape. Repeat until you have 8 shells.
- Bake for 8-10 minutes until golden. Let cool completely on the tin before carefully removing.
- In a large bowl, beat the softened cream cheese until smooth. Add sugar and vanilla and beat until combined.
- Slowly pour in the heavy cream and beat on medium-high speed for 2-3 minutes, until the mixture is light and fluffy.
- Gently fold in the finely chopped strawberries.
- Spoon the filling into the cooled graham cracker shells. Garnish with more strawberries if desired. Serve immediately.
Notes
- Make sure your cream cheese is at room temperature for a lump-free filling.
- The taco shells must be completely cool before filling, or they will crumble.
- You can make the shells a day ahead to save time.
- For an extra touch, drizzle with a little chocolate or strawberry sauce.
